We’re starting to find fresh apricots at farmer’s markets and roadside stands. If you’ve never had a fresh apricot, it is something you just have to try! We decided we had to come up with a great smoothie to celebrate the delicious fruit we got recently. Apricots can be a little tart, so you may want to add a little sweetener. We like it as is!

  • 5 apricots, halved and stones removed
  • 1 orange, peeled and quartered
  • Sweetener to taste, if desired

Blend ingredients on a low Variable setting until combined, about 15-20 seconds. Use tamper if necessary to ensure the orange is incorporated. Add 1/2 – 1 cup of ice to the container, then start the blender on low before quickly increasing speed and switching to the High setting to crush the ice to the desired consistency. Garnish with mint and serve!

Serves 2.

This is a great treat that the entire family loves!

  • 1 cup Silk French Vanilla non-dairy creamer
  • 2 cups frozen, organic Lambert cherries, unsweetened
  • 1/4 cup turbinado sugar
  • 1 tsp. vanilla extract

Place all ingredients into the Vitamix container in the order listed and secure lid.  Select Variable 1. Turn machine on and slowly increase speed to Variable 10, then to High. Use the tamper to press ingredients into the blades. In about 30 seconds, the sound of the motor will change and four mounds should form. Stop machine. Do not overmix or melting will occur. Serve immediately.

Serve with chocolate syrup and chocolate chips- enjoy!

My husband and I wanted to make pesto pizza, but we wanted to make healthy pesto sauce, without all of the traditional oil. We combined several recipes until we came up with this winning combination.

  • 2 cups packed fresh, organic basil leaves
  • 1 cup packed fresh, organic spinach or parsley
  • 1/4 cup Panko bread crumbs
  • 2 garlic cloves
  • 1/4 cup pine nuts
  • 1/4 cup water (more or less depending on desired consistency)

Blend greens, garlic, pine nuts and bread crumbs in the Vitamix on high, until smooth.

Slowly drizzle in water while machine is running to reach desired consistency.

Spread pesto on sandwiches, pizza or use as a pasta sauce.

Hint: Freeze individual portions in an ice cube tray for use later. When frozen, just pop out of the tray and keep pesto cubes in a zip lock bag in the freezer until needed.
