This is my very favorite pumpkin recipe that we’ve been making for years. It’s easy and delicious!

Mix these ingredients in a Vitamix blender:

  • 2 packages of Mori Nu tofu (12.3 oz each)- extra firm
  • 4 cups of pumpkin (fresh or canned)
  • 1-1/3 cups maple syrup
  • 3 T pumpkin pie spice (or to taste)
  • 2 tsp. vanilla
  • sprinkle of cinnamon

Blend on low for about 30 seconds until mixed. Turn to high to “whip” for 15 seconds. Add extra pumpkin pie spice if necessary, but keep in mind, the spice will become stronger in the pie as it cooks.

Put the pumpkin pie filling into 2 unbaked pie crusts. Sprinkle with cinnamon and bake at 350 degrees for one hour. Cool before eating, top with whipped cream or cashew cream and enjoy!

Note– Depending upon the size of the pie crusts, there be leftover pumpkin pie filling. If so, put it into custard dishes and bake for 30 minutes at 350 degrees. It’s a yummy, healthy snack anytime!

Makes TWO pies and serves 16 (8 each).
