This recipe was great without a Vitamix, but is magnificent by blending the sauce in the Vitamix. Must have something to do with the Vitamix blade spinning at 240 mph and literally splitting open the cell walls to release the nutrients and the flavors. This is so YUMMY!

  • 2 cups red lentils

Thoroughly wash the lentils (really, really well, in a sieve… because otherwise they get scummy when they cook). Put the lentils in a pot, cover with water and cook on low until done- about 20 minutes. Add more water if needed. While the lentils are cooking, blend the following ingredients in your Vitamix:

  • 3 tomatoes, halved
  • 3 T red curry paste
  • 1/2″ chuck of fresh ginger root (cut into two or three pieces)
  • 1 T curry powder
  • 1 T tumerick
  • 1 T chili powder
  • 1 T tamari (or soy sauce)
  • 1 T maple syrup
  • 1 T fresh garlic

Blend on low for 15 seconds, then on high for 3-5 minutes until steamy and all the flavors have been well blended.

While the sauce is blending, saute:

  • 1 large onion, diced
  • 1 T olive oil

When the onions are cooked, add the onions and the sauce to the lentils, stir and cook for another 5 minutes or so on low heat, until the lentils have absorbed the sauce. Serve and enjoy!
