This is my vegan version of the traditional Indian cottage cheese and peas dish. I usually replace the cheese with chucks of baked tofu, but for this version, I replaced the cheese with carrots. Either way, it’s the amazing sauce made in my Vitamix that makes the dish so yummy!

Blend in Vitamix:

  • 1-1/2 cups coconut Silk
  • 1/2″ slice of Creamed Organic Creamed Coconut (see notes section on where to purchase)
  • 1 T cumin
  • 1 T garam masala
  • 1 T tumerick
  • 1 T chili powder

Blend all above ingredients on high for 5 minutes to release the flavors. While you’re waiting, saute:

  • 1 large yellow onion, diced
  • 1 red pepper, diced
  • 3 carrots, diced

When onion is translucent, add:

  • 1 cup of corn
  • 1 cup of peas

Add the steamy sauce from the Vitamix, stir and enjoy!

Serves 6 (as a side dish) or 2-4 as an entree.
